Rieslings from Germany, Gewürztraminers from Alsace, Pinot Noir from Sonoma and Willamette Valley are all ideal matches for raw fish. Mature Napa Valley Cabernet Sauvignons and stainless-steel fermented Chardonnays are also wonderful matches with Japanese cuisine.
